So you’ve been trapped indoors, on your balcony or within your small yard space….eating…snacking…all around playing havoc with your weight, health and overall feeling of well being! Sooo here is a recipe for you to try that is packed with protein, fruit and just tastes Yummy!!!
Note: The protein powder in this recipe is Herbalife’s Caramel Apple Meal Replacement Protein Powder. You can use any brand, flavor or unflavored powder but you might want to adjust the fruit included to more closely match what you’re using. That said, you should keep the banana in the recipe to maintain the texture and depth of your batter.
Preheat your oven to 325° and spray a 6 cup muffin tin (if you use paper inserts they need to be sprayed)…you can also use a bundt pan instead of individual muffins
Ingredients
- 4 Tbsp Protein Powder
- 4 Eggs
- 3/4 cup oats (the 1 min
kind)
- 1 – medium very ripe banana
- 1 – green apple chopped into very small bits
- 1/8 tsp salt
- 1 Tsp baking powder
- cinnamon & spice blend to your liking
- (optional…add some finely chopped walnuts or almonds depending on your flavor and fruit)
Combine all ingredients in a bowl and mix until smooth (will still have bits of apples & oats). Fill muffin tins almost to the top, sprinkle with a little more cinnamon and bake for 25 minutes. Toothpick should come out clean. Then Enjoy with NO GUILT while increasing your energy and well being!
